I really love ready-made frozen puff pastry, because you can cook a lot of things from it, the flight of your culinary imagination is limitless. Today I offer you a very simple recipe for cheese puffs, and you can use either puff pastry or yeast-free dough. They are prepared very quickly and so simply that cheese puffs can be considered almost everyday baking. They are perfect for breakfast and for a quick and satisfying snack; they can also be served for a light dinner and are great to take with you on the road or on a picnic. The type of cheese you use in this baking can be absolutely anything, choose the one you love or the one you have on hand. I would like to note that the most delicious puff pastries are when they are just out of the oven, incredibly aromatic, tender, crispy and very appetizing.

Ingredients:

  • package of frozen puff pastry 400 - 500 g
  • hard cheese of any kind 150 - 200 g
  • 1 raw egg for brushing the top

Cooking method

Defrost the puff pastry according to the instructions on the package, roll it out lightly in one direction and cut into rectangles; you choose the size of the puffs yourself. We visually divide our piece into two parts and make small cuts on one side with a knife.

I usually don’t grate cheese, but simply cut it into thin small slices.

Place 2 - 3 cheese slices on the whole part of the future puff pastry,

cover and seal the edges well with a fork.

All we have to do is place them on a baking sheet lined with baking paper and brush the top with a loose raw egg.

Cheese puffs are a great snack option. They only require two main ingredients to make. If desired, you can supplement the recipe, for example, add several different types of cheese, meat and vegetables to the filling.

Ingredients:

  • Flour - 1 kg;
  • Butter - 800 g;
  • Vinegar - 20 ml;
  • 3 eggs;
  • Cheese - 400 g;
  • Water - 350 ml;
  • Salt - 5 g;
  • Sesame - 5 g.

Step-by-step recipe for cheese puffs

Set aside one egg; we will use it later to grease the products. Place the water in the freezer for a while. It should be very cold, almost icy. The butter also needs to be frozen.

Break the remaining eggs into a bowl suitable for mixing the ingredients. Pour in salt and vinegar and whisk the mixture with a whisk.

Pour ice water into the egg mixture and beat again. Place the preparation in the refrigerator.

Pour the flour onto the table. Grind it with butter until crumbly. Assemble the components in a mound and make a depression in the middle. Pour the egg mixture into it.

Puff pastry cannot be kneaded. Just gather it around the edges, layer it and press it down. Form a cube out of the dough and put it in a bag. Let it sit in the refrigerator for at least two hours.

Turn on the oven to 200°. Roll out the dough very thin. Cut it into squares.

Grate the cheese. Place 2-3 spoons on each piece of dough. You can squeeze a clove of garlic into the filling, it will add the necessary spiciness.

Beat the last egg. Brush the edges of the dough with it and secure them together. Cover the entire surface of the puff pastry with the remaining egg mixture. Sprinkle it with sesame seeds.

Place the products on a baking sheet with oiled paper. Bake them for 20 minutes.

This puff pastry can be stored in the freezer for several months. It is very convenient to prepare a large portion at once, and then defrost it in parts as needed.

Option 2: Quick recipe for cheese puffs

Puff pastries can be prepared not only in the oven, but also in the microwave. In this recipe, the dough is additionally brushed with aromatic hot sauce to preserve the juiciness of the baked goods.

Ingredients:

  • Dough - 0.5 kg;
  • Mustard - 5 g;
  • Egg;
  • Mayonnaise - 5 g;
  • Ketchup - 5 g;
  • Cheese - 200 g.

How to quickly make cheese puffs

Remove the dough from the freezer in advance. Place it on a work surface and roll it out to a thickness of 3 mm.

Cut the dough into small rectangles.

Combine ketchup with mayonnaise and mustard. Brush each piece of dough with sauce, not reaching the edges.

Grate the cheese. If desired, you can add chopped herbs to it. Sprinkle each rectangle of dough with cheese and seal the edges.

Brush the puff pastries with beaten egg. Place them on a microwave-safe plate.

Place the workpiece in the oven for 10 minutes at maximum power.

Instead of ketchup and mayonnaise, you can use your favorite sauce. You can even prepare it yourself, for example, from fresh tomatoes and spices. Homemade mayonnaise made from olive oil, lemon juice and raw eggs is also very tasty.

Option 3: Double Cheese Puffs

In this recipe, puff pastries are filled with two types of cheese at once. It is not necessary to use only those varieties indicated in the recipe. For example, instead of Adyghe cheese, you can use regular cottage cheese, cheese or feta.

Ingredients:

  • Yeast puff pastry - 450 g;
  • Cheese - 150 g;
  • Flour - 30 g;
  • Egg;
  • Adyghe cheese - 150 g;
  • Sesame, flax (seeds) - 10 g each.

Step by step recipe

Grate two types of cheese. Pour them into one bowl and mix well. The result should be a homogeneous sticky mass; form a ball out of it.

Dust the board with flour and place half of the dough there. Cut it into equal squares. You can start preheating the oven to 200°.

Place cheese balls inside each square. Fasten the opposite edges diagonally to create a kind of envelope.

Grease a baking sheet or line it with special parchment. Place the dough envelopes on the bowl.

Beat the egg. Brush each puff pastry and sprinkle with flax and sesame seeds. Place the pan in the hot oven for 20 minutes.

To make the filling more rich and piquant, add at least 50 g of Parmesan, Emmental or cheddar. Don't be afraid to experiment with your favorite cheeses to achieve the perfect flavor.

Option 4: Puff pastries with cheese and tomatoes

This recipe uses a classic, very successful combination of ingredients: tomatoes, mozzarella and herbs de Provence. You can use them to make Caprese salad or Margherita pizza. Puff pastries with this filling turn out incredibly tasty, with notes of Italian cuisine.

Ingredients:

  • Dough - 0.5 kg;
  • 2 tomatoes;
  • Cream - 50 ml;
  • Mozzarella - 180 g;
  • Provencal herbs.

How to cook

Drain the brine from the package of mozzarella. Cut the cheese into not too thin slices. Chop the tomatoes in the same way.

Roll out the defrosted dough slightly and brush it with heavy cream. They will give the filling tenderness and juiciness.

Cut the dough into equal rectangles. Place 1-2 slices of tomato and mozzarella on each of them. Sprinkle the preparation generously with herbs. Don't forget to salt the filling, otherwise the puff pastries will taste bland.

Gather the edges of each piece. Make several cuts. Brush the dough with the remaining cream.

Bake the puff pastries at 220° for a quarter of an hour.

Various herbs, fresh or dried, are suitable for baking. Tomatoes and mozzarella go best with basil and oregano. You can limit yourself to a ready-made mixture of dry spices from the store.

Option 5: Puff pastries with cheese and mushrooms

If you want to fill your puffs with something a little more substantial than cheese and veggies, try making them with mushrooms. This dish is respected by vegetarians. It satisfies perfectly, despite the lack of meat in the recipe.

Ingredients:

  • Dough - 450 g;
  • Mushrooms - 250 g;
  • Bulb;
  • Olive oil - 20 ml;
  • Sour cream - 100 g;
  • Cheese - 200 g.

Step by step recipe

Wash the mushrooms, peel them if necessary. Remove the peel from the onion.

Grate the mushrooms and onions. You can grind the ingredients in a blender, but do not grind them into porridge.

Place the onions and mushrooms in a frying pan where the oil is already heating up. Fry the mixture for a few minutes, then add salt and pepper.

Add sour cream to the pan. Stir and simmer the filling for a couple more minutes. While it's cooking, roll out the dough.

Spread the filling over the entire surface of the dough. On one side, leave an empty strip no more than 2 cm thick.

Grate the cheese and sprinkle it on top of the mushrooms. Roll the dough into a log, then cut it into small pieces.

Remember that the heat treatment time for mushrooms depends on their variety. Some products need to be boiled in advance or fried for a long time, only then can they be placed on the dough.

Option 6: French puff pastry with cheese and ham

In French cuisine there is an original recipe for layer cake with ham and Comté cheese. This puff pastry is baked whole and only then cut into portions.

Ingredients:

  • Yeast-free puff pastry - 250 g;
  • Ham - 150 g;
  • Cheese - 75 g;
  • Milk - 250 ml;
  • Oil - 20 g;
  • Egg;
  • Flour - 30 g;
  • Nutmeg - a pinch.

How to cook

Melt the butter in a saucepan. Pour flour into it, rub with a spatula until smooth. Gradually pour milk into the mixture and cook until it thickens.

Grate the cheese. Mix it with nutmeg, pour the mixture into the hot sauce.

Place half of the dough in a rectangular shape, make small sides. Preheat the oven to 190°.

Lubricate the workpiece with sauce. Cut the ham into thin slices and place it on the dough. Repeat the manipulations until the ingredients run out.

Roll out the second half of the dough. Place it on top of the filling. If desired, you can decorate the puff pastry with a mesh or braid made from leftover dough.

Brush the entire surface of the pie with beaten egg. Place in a preheated oven for 40 minutes.

Some chefs advise not to defrost the dough completely. In this case, it will be easier to fashion everything you need out of it. Instead of Comté, you can use any hard cow's milk cheese.

Option 7: Puff pastries with melted cheese and minced meat

Meat puffs are especially popular among students and office workers. One such pie will help you quickly satisfy your hunger, and you won’t have to be distracted from study or work.

Ingredients:

  • Dough - 500 g;
  • Processed cheese - 120 g;
  • Minced meat - 300 g;
  • Egg;
  • Oil for frying - 30 ml.

Step by step recipe

Heat a frying pan with oil. Fry the minced meat on it until cooked. If desired, you can add chopped onion to it for juiciness.

Salt the meat and add spices. Stir and remove from heat.

Roll out the dough, cut it into squares. Place a little cooled minced meat in the corner of each of them.

Preheat the oven to 200 degrees. Beat the egg with a fork, brush the puff pastries with the egg, sprinkle with sesame seeds and flax seeds.

  • Puff pastry puffs with cheese will always turn out airy and crispy if they are prepared from a yeast-free semi-finished product. Yeast puff pastry forms fewer layers during the industrial preparation process, so baked goods made from it are softer, but more pleasant to taste.
  • Puff pastries can also be prepared with cream or cottage cheese. The dough needs to be divided into squares, brushed with egg, mix the cream cheese with sugar (take 60 g of sugar for 150 g), add the mixture in the middle and bake at 220 degrees for 25 minutes. When baked on the sides, the dough will rise, become crispy, and the sweet filling will remain in the middle.
