You will need two glasses of flour, which must first be sifted. The flour will be saturated with oxygen and make the dough more airy. Pour the flour into a bowl, add half a teaspoon of salt and sugar. Stir thoroughly. Make a small well in the mixture.

Grate 150 mg of hard cheese on a coarse grater. Set it aside.

Kefir must be taken out of the refrigerator in advance, it must warm up to room temperature. Its fat content can be anything from 1 to 2.5%. Measure out a glass of fermented milk drink. Stir half a teaspoon of baking soda into it. The acid in kefir is neutralized by baking powder. This is confirmed by an increase in the volume of the mixture.

In parts, about 1/3 at a time, pour kefir into a bowl of flour, gently stirring the resulting mass. Add grated cheese to the finished mixture and place it on the table to knead the dough.

Make a small depression in the resulting mass and pour 50 grams of refined vegetable oil into it. Knead the dough until it stops sticking to your hands. It should be soft enough, but not runny.

If the dough turns out hard, add a little more kefir to it. If it spreads and does not stick, add a pinch of flour. The finished dough must be wrapped in cellophane and left to “rest” for 30 minutes. A long sausage with a diameter of 5-6 cm is formed from the mass, which is cut with a knife into pieces with equal sides. Balls are rolled out of them. Flatten the workpiece with your hands and bring it with a rolling pin to a thickness of 0.5-1 cm.

Pour kefir warmed to room temperature (1 cup) into a bowl. Stir in half a teaspoon of baking powder (soda). Break one egg there. Whisk everything thoroughly.

Add half a small spoon of salt to the resulting mixture. Add two tablespoons of vegetable oil to give the dough elasticity. Stir the mixture. Pour two cups of sifted flour in portions. At the same time, stir everything thoroughly.

Place the lump on the table and prepare the dough. Wrap the thoroughly kneaded semi-finished product in film. Cover with a towel. Leave for 30-40 minutes at room temperature.

Form the dough into balls approximately equal in size to the minced meat balls. Roll out into flat cakes to a thickness of 1 cm. Place the filling in the middle. Gather and pinch the edges. Flatten the workpiece with your hands. Place the glued side on the table and roll it out again to a thickness of half a centimeter.

Fry the appetizer, covered, in hot vegetable oil until golden brown. Place the finished treat on a napkin to remove excess fat.

Kefir flatbreads with chicken in a frying pan

The prototype of this dish is the Mexican quesadilla - a flatbread with chicken filling, which has a very rich, rich taste.

To prepare the snack, we will need to bake unleavened kefir cake. To do this, take a glass of kefir at room temperature, add half a teaspoon of soda and salt to it. Leave the mixture for 10-15 minutes. And then pour it into the sifted flour, which will need about 2.5 cups.

Knead a soft but not spreading dough. Set it aside to swell under cling film for at least half an hour. Form thin cakes (0.3-0.4 cm). Fry them on both sides in a hot frying pan without oil. Fold in a stack and set aside.

To prepare the filling you will need:

  • 50 grams of hard cheese;
  • 100 grams of chicken fillet;
  • half a large onion;
  • ½ sweet bell pepper;
  • a tablespoon of tomato paste;
  • salt and pepper to taste.

Cut all ingredients into cubes and fry in olive oil until cooked. Place in a saucepan, add tomato paste, salt and pepper, simmer over medium heat without a lid for 3-4 minutes.

Fresh champignons are suitable as a filling. You will need 150 grams of mushrooms. Under no circumstances should they be washed. Carefully peel off the outer skin with your hands or a knife.

We cut the champignons into thin slices. Add half of the onion to them. Fry in vegetable oil. Let the excess fat drain onto a paper napkin.

Prepare quick dough. Mix two glasses of flour with salt and soda (half a teaspoon each) and a teaspoon of sugar. Add a whole chicken egg and 250 ml of low-fat kefir. Knead the dough. Leave under the film to swell at room temperature for 40 minutes.
